Stephanie and Matt are having a fall wedding at the Nassau Inn, Princeton NJ. We thought it would be fun to do some spring time pics at New York’s Bethesda Fountain but sometimes the best laid plans don’t go as planned. We had a great time walking the park for photographs and learned some Japanese too as it was “Japan Day”. The word of the day was おはよう。and is pronounced Ohio and means “good morning”. After seeing the Wedding Cake for Prince William & Princess Catherine I thought it would be fun to do a “great Cakes” post with some of my fav cakes over the years. Check out these over the top wedding cakes from amazing cake designers like Sylvia Weinstock the “Da Vinci of Wedding Cakes” , “The Cake Boss” Buddy Valastro of Carlo’s and Pastry Chef Peter Max Dierkes of Rat’s at The Grounds for Sculpture.

Erica gave a nod to her French roots by having a croquembouche. What is a croquembouche you ask well it’s a tower of creme-filled, puff-pastry balls (called “choux” in French) which are piled into a high pyramid and encircled with caramelized sugar. This sugar is what gives the dessert it’s name- croquembouche loosely translates to “crunch in the mouth”. In addition to spun sugar, the croquembouche can be decorated with icing, chocolate, sugared almonds or candy ribbons.
This was from a Baptism I did for a lucky little girl Olivia Grace.
This cake was called “The Green Monster” by the bride who just told Pastry Chef Peter Max Dierkes of Rat’s at The Grounds for Sculpture to think of cirque du soleil and run with it her fav color is green and she loved the cake so much she has an 8×10 hanging on the wall in her home amount the pictures of her family.
This cake was created by the bride her self. Brianna who is not a baker and never designed a cake in her life took a class at her local Michael’s art store and practiced for months and was able to create this amazing cake filled with Pillsbury funfetti.
